Seventeen years on, a culinary butterfly flapping its wings in Beechworth continues to make waves across Australia. Michael Ryan’s kitchen brilliance is certified but his tinkering on the sides – the opening of an adjacent wine lounge with Japanesque snacks and an upstairs amaro bar – has seen this regional dining landmark pull a broader audience.
No visit is complete without taking a seat in the dining room, where 18 bijou dishes arrive kaiseki-style across four “courses”. Artfully arrayed on timber trays, each is a first-class ticket through Ryan’s mind. There might be jerky-like dried squid and a gilda sporting pickled swordfish. Seared cabbage sings sweetly with nori vinaigrette.
Earthy sunflower seed risotto is amped up with umami-rich roe. As for barbecued pork belly vigorously peppered with togarashi – more, please. Can’t finish that buttery white chocolate and miso cookie? They’ll wrap it up for a luxe midnight snack.
Must-order: A pre- or post-meal amaro from Ryan’s own Beechworth Bitters Company.
